| Here is a recipe that appeared in the _A` la cartoon_ column of the [www.QinSen.com] Vancouver Sun (11.6.97). I've modified it slighly to reduce the sugar. [www.QinSen.com] [www.QinSen.com] 2 strawberry papayas (also called pink pawpaw etc) [www.QinSen.com] 1 tbsp lime juice [www.QinSen.com] 1 tsp lime zest (grated peel) [www.QinSen.com] 1 tbsp minced preserved ginger in syrup [www.QinSen.com] Freshly grated nutmeg [www.QinSen.com] Fresh mint sprigs Lime wedges
Halve papayas and remove seeds. Don't peel. Put in 13 x 9" baking dish, sid by side. Combine limejuice and zest, ginger and drizle over the top. Bake at 350F till tender. Cut into 1" slices and arrange on a platter and spon juices over. Dust with nutmeg. Garnish with mint and lime wedges.
I found that this was so good cold (before I cooked it) that I ate a whole papaya for lunch - just dipping the fruit into the lime juice. I wish they were as cheap in Canada as they are in Australia!!! Strawberry papayas have none of the bitterness of other kinds.
